1 packet Organic Falafel Mix
4 small tortilla wraps
2 tbsp tahini
Juice of 1 lemon
For the filling:
1 packet Organic Houmous Mix, prepared as per instructions
1 tomato, chopped into cubes
Small handful of torn peppermint and coriander leaves
A handful of salad leaves
¼ red onion, cut into thin slices
Red cabbage pickle
- Empty the falafel sachet into a bowl and add 125ml of boiling water, 1 tbsp sunflower oil and a squeeze of lemon juice. Stir well and leave to rest uncovered for 10 minutes.
- Shape into 12 round balls and fry them in a little sunflower oil for 4-5 minutes until golden.
- Make a tahini dressing by mixing the tahini, 1 tsp lemon juice and a splash of water.
- Assemble the wraps by topping each with the filling ingredients and three falafels. Lastly, drizzle with the tahini dressing.
