Gluten Free Falafel Salad

Falafel salad
Makes 1 large/2 small salads
1 box of Just Wholefoods Organic Falafel Mix
1 bag of mixed leaves (we used Watercress, Spinach & Rocket)
2 handfuls of cherry tomatoes
1/4 of an average sized cucumber
50g cashew nuts
1 avocado
A plant-based dressing of your choice

 Empty falafel sachet into measuring jug
Add 125ml of boiling water, 1tbsp sunflower oil & a squeeze of lemon juice
Stir well & leave to set for 10 minutes
Shape into balls and fry until golden brown
Place leaves into serving bowls 
Slice the tomatoes and cucumber and place them amongst the leaves
Add the avocado, cashew nuts and cooked falafel
Garnish with dressing
    This salad keeps in the fridge for up to 2 days!
